Beef Roast with Black Garlic Glaze

Ingredients

  • For the Beef Roast:

    • 1 (3-4 lb) beef roast (ribeye, sirloin, or tenderloin)
    • 2 tbsp olive oil
    • 1 tsp salt
    • 1/2 tsp black pepper
    • 1 tsp dried rosemary (or fresh, finely chopped)
    • 1 tsp thyme
  • For the Black Garlic Glaze:

    • 6 cloves black garlic, mashed into a paste
    • 1/4 cup balsamic vinegar
    • 2 tbsp honey or maple syrup
    • 2 tbsp soy sauce
    • 1 tbsp Dijon mustard
    • 1 tbsp unsalted butter

Instructions

1. Preheat and Prep:
Preheat your oven to 375°F (190°C). Pat the beef roast dry with a paper towel, then rub it all over with olive oil, salt, pepper, rosemary, and thyme.

2. Sear the Roast:
Heat a large skillet over medium-high heat. Sear the beef on all sides until a golden-brown crust forms (about 2-3 minutes per side). Transfer to a roasting pan.

3. Make the Black Garlic Glaze:
In the same skillet, melt the butter over medium heat. Add the black garlic paste and sauté for 1 minute until aromatic. Stir in balsamic vinegar, honey, soy sauce, and Dijon mustard. Simmer for 2-3 minutes until slightly thickened.

4. Roast the Beef:
Brush the black garlic glaze generously over the roast. Place in the oven and roast for about 15-20 minutes per pound for medium-rare (internal temperature of 135°F/57°C). Baste with additional glaze halfway through cooking.

5. Rest and Serve:
Remove the roast from the oven and tent with foil. Let it rest for 10-15 minutes to allow the juices to redistribute. Slice the roast and serve with any remaining glaze drizzled over the top.
